Hand-sliced from the prized shoulder of free-range, field-reared 50% Iberian pigs, this exceptional Spanish Paleta Ibérica de Bellota is naturally cured for over 34 months in FISAN’s traditional cellars in Guijuelo, Salamanca. Delicately marbled with a lean yet succulent texture, it offers an elegant balance of nutty richness, gentle sweetness and deep savoury flavour. The extended natural curing allows the fat to evenly permeate the meat, creating remarkable depth, aroma and a smooth, lingering finish.
