Step 1. Preheat your oven to 200c
Step 2. Cut your potatoes into chunks, then place them into a large bowl with cold water and salt.
Bring them to a simmer and cook for around 6 mins, drain the potatoes and allow them to cool slightly.
They should be a little soft on the outside but still firm on the inside.
Step 3. Add your ghee with the salt and chopped rosemary or thyme.
Step 4. Pour the ghee over the potatoes and toss them until coated in the ghee.
Step 5. Put onto a roasting tray and cook for 40 minutes, check them regularly and turn them so they can all get crispy.
