- Place the chickpeas, onion, garlic, coriander, cumin, anise, chilli, egg white and salt and pepper in a blender/ food processor and process to a firm, but textured paste. Stir in the baking powder.
- Use a little gram flour on your hands to shape the mixture into balls.
- Heat a 1 inch dept of oil in a pan to 180°C. Fry the falafels for about 2 minutes until golden brown.
- Cut all the peel and white pith from the orange and lift out the segments, catching the juice. Whisk the orange juice with olive oil. Lightly toss the orange and rocket with the dressing.
